Chill Out With Salade Nicoise

Salad Niçoise (pronounced nee-suaz) is a French salad, and hails from Nice on the Mediterranean in the south of France.
I’ve been eating Salad Nicoise for 20 years and love it. Intense flavours, and a variety of textures make it very satisfying to eat. Core ingredients are tuna, potato, tomato, egg, olives, and beans. Different versions of the salad have been developed, but below you will see my favourite version.
So here is Kimbo’s Salade Nicoise……………..
Kimbo’s Salade Nicoise Recipe
Ingredients
Vinaigrette
1/2 cup Balsamic Vinegar
3/4 cup extra-virgin olive oil
1 tbsp minced fresh parsley leaves
1 teaspoon Dijon mustard
Salt and freshly ground black pepper
Salad
2-3 cans of tuna
6 hard boiled eggs, peeled and either halved or quartered
Half a kilo of 10 Kipfler potatoes (each potato scrubbed)
Salt and freshly ground black pepper
3 medium ripe tomatoes, cut into eighths
1 medium red onion, sliced thin
8 ounces green beans, stem ends trimmed and each bean halved crosswise
1/4 cup Kalamata olives
Several anchovies
Method
1 Whisk vinegar, oil, olive, parsley, and mustard in medium bowl; season to taste with salt and pepper and set aside.
2 Bring potatoes and 4 quarts cold water to boil in a large pot. Add 1 tablespoon salt and cook until potatoes are tender, 10 to 12 minutes. Transfer potatoes to a medium bowl with a slotted spoon (do not discard boiling water). Toss warm potatoes with 1/4 cup vinaigrette, then set aside.
3 While potatoes are cooking, toss tomatoes, tuna, red onion, 3 tablespoons vinaigrette,
and salt and pepper to taste in bowl. Wait for potatoes to cool, then slice potatoes. Add to salad.
4 Return water to boil; add 1 tablespoon salt, and green beans. Cook until tender but crisp. Drain beans, transfer to reserved ice water, and let stand until just cool. Dry beans, then toss with dressing, and salt and pepper to taste. Add to salad.
5 Arrange hard boiled eggs and olives to the side of the salad. Drape the anchovies over the top of the salad. Drizzle more dressing over the salad. Serve immediately
6. Serve with the best French bread you can find.
